Arugula Pesto, ver. 1 1/4 cup olive oil
2-4 garlic cloves, to taste
3-4 cups fresh, washed arugula (or a combination of arugula and basil is good. I've added kale also with delicious results)
1/4 cup walnuts or pine nuts
1/4 cup grated parmesan
Salt to taste
Combine olive oil, nuts and garlic in blender to make a paste. Add arugula, parmesan and salt and blend thoroughly. Great on crackers, sandwiches or pasta (can be thinned with a bit of chicken broth).
